Spicy Cantaloupe Bites

Juicy melon, tangy sauce and assorted peppers come together to create a sweet and spicy tidbit. Combine these peppered melon balls with plain melon for a refreshing salad. —Aysha Schurman, Ammon, Idaho

Ingredients

  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon red pepper sauce
  • 1 teaspoon chipotle pepper sauce
  • 1/4 teaspoon pepper
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili paste
  • 1/4 teaspoon cayenne pepper, optional
  • 3 cups cantaloupe balls (about 1 medium cantaloupe)

Directions

  1. In a large bowl, combine the first eight ingredients (plus cayenne, if desired). Add cantaloupe; toss to coat. Refrigerate 30 minutes before serving. Stir to recoat and serve.
