Southwest Rice

Ingredients

  • 1 cup water
  • 1/2 cup frozen corn, thawed
  • 1/2 cup chopped sweet orange pepper
  • 1/2 cup black beans, rinsed and drained
  • 1 can (4 ounces) chopped green chiles
  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground turmeric
  • 1 cup uncooked instant rice

Directions

  1. In a large saucepan, combine the first 10 ingredients; bring to a boil. Stir in rice. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork.
